Cool pancake molds, huh? They fry up pretty good!

This is our fall/Thanksgiving tablecloth..The plates don't really match, but I like the colors.

Since we moved her to Idaho, we decided to celebrate fall with a fall dinner...My mom sent me these awesome leaf pancake molds..Then I got this yummy recipe from a coworker. There are alot of versions of this recipe on the internet..But I think this one is totally yummers!

Spicy Apple Pancakes with Cider Sauce
2 cups Bisquick
1/2 tsp cinnamon
1 egg
1 1/3 cup milk
3/4 cup grated apple (about 2-3 apples) I used granny smith.
Beat it all together with beater till smooth (or smoothlike). Pour batter by 1/4 cup on hot griddle, greased if necessary. (I use Pam). Bake until bubbles appear. turn bake till golden brown. Serve with warm cider sauce, top with sour cream (we didnt do that not a sour cream fan). Makes 18 -4" pancakes. (not really more like 9-10 good size pancakes)
Cider Sauce
1 cup sugar
2 T cornstarch
1/4 tsp cinnamon and nutmeg (or pumpkin pie spice)
2 cups apple cider
2 T lemon juice
1/4 cup butter
In saucepan, mix it all except butter. Cook, stirring constantly, untill mixture thickens and boils. Boil and stir 1 minute. Remove from heat, stir in butter (makes 2 1/2 cups) .
Serve with sausage, milk, or whatever...Eat it up.
