Our Fall Colors

Howdy folks, this is here is our guns. We aim to kill. Just kidding. These are our walking sticks and they are still in our van for future use. Brayd took this picture! What an awesome little man! This is the end of the trail...We wore them out especially Lyndee. Atleast they aren't shooting anybody..they arent misbehaving. It has been a long time since we have been able to go and look at the changing of the color in the trees. The last time was when Clay and I went with my best friend in whole world up to Escudilla Mountain. I love those colors and nothing will ever beat that! So as a little family time today, we went up to Kelly Canyon to check out those colors. I was really homesick for my northern Arizona land. The kids had such a good time pretending to be tigers on the trails. They loved their walking sticks and they did not even poke or hit each other with them. They loved the outdoors and we now need to go hiking more often with them. It such a nice relaxing day. It w

Cool pancake molds, huh? They fry up pretty good! This is our fall/Thanksgiving tablecloth..The plates don't really match, but I like the colors. Since we moved her to Idaho, we decided to celebrate fall with a fall dinner...My mom sent me these awesome leaf pancake molds..Then I got this yummy recipe from a coworker. There are alot of versions of this recipe on the internet..But I think this one is totally yummers! Spicy Apple Pancakes with Cider Sauce 2 cups Bisquick 1/2 tsp cinnamon 1 egg 1 1/3 cup milk 3/4 cup grated apple (about 2-3 apples) I used granny smith. Beat it all together with beater till smooth (or smoothlike). Pour batter by 1/4 cup on hot griddle, greased if necessary. (I use Pam). Bake until bubbles appear. turn bake till golden brown. Serve with warm cider sauce, top with sour cream (we didnt do that not a sour cream fan). Makes 18 -4" pancakes. (not really more like 9-10 good size pancakes) Cider Sauce 1 cup sugar 2 T cornstarch 1/4 tsp cinnamon and nu

Okay...here is a sneak peek of what my little ones will be for Halloween. We have two super heroes. Brayd wanted to be black spiderman and Lyndee will be bat girl..I told Brayden that Spiderman is retiring and that he will need to be something different. Well, we'll see...until then Pheww! Watch out for that web!

Card Swappin Munchies

Last week, I hosted our card exchange at my house and served up some treats..... I have no idea what you call this....so it is dubbed "That Coconut Thing". It was the easiest thing to make: 14 oz bag SWEETENED coconut flakes 3/4 cup sweet condensed milk. Mix together and put in a nonstick sprayed glass pan 9 x13 pan. Bake at 350 for 2o minutes. These babies were apple dumplings cooked in Mountain Dew. The recipe can be seen "here". I served it with cool whip..It was delish!

Lyndee's new ride

Finally...after 5 years....Lyndee is finally playing with the toys we have bought for her..This kangaroo was actually mine when I was her age.. So it is about 30 years..not bad for an old kangaroo. I won this in a contest at a bookstore?? She sure looks cute hopping around on it and she enjoyed playing with her toys. I won't show you a picture of her room because...well you know what happens when kids play with their toys. AND I am not picking them up. My remedy...close the door.

Bbq cups

This is what we had for dinner tonight. They are called barbecue beef cups. We've had these a couple times in our married life but...tonight they were actually good. It says to use refrigerated biscuit rolls. Don't save money and buy the crappy kind. Use the Grands brand. We don't eat alot of beef in our home..so we used ground turkey.. This is the view from my door. I really dont have two whiteboards. The one on the right is my smartboard. It is my baby and I use it every day. A smartboard is an interactive whiteboard that is hooked up to my computer. Instead of a mouse, I can tap my board. This is my reading area. The chairs look familiar? They used to be on my front porch in the summer. My library has three book shelves with books in baskets by whether they are A.R. or not. A.R is a program that provides comprehension questions to books read. Even though you can't tell, I have about 400 books in my library almost as much as our school library..Well..not really. This is where my lovelies hand in their work. Do you love my window treatments? I made those myself...I cut the grass out back, dried it, and hot glued fake flowers on them. Do you believe me? Yummy Hawaiian Chili

Yup...That is pineapple with chili powder sprinkled on. She scarfed them down. My mom clipped this easy dish out of the Arizona Republic over a year ago. I think this is the first time we tried or the second. Either way, it was yummy. 1 14 oz can sliced pineapple (drain the juice or put it in) 1 lb of ground pork 1 can kidney beans (drained) 1 16 0z salsa (we used black bean and corn salsa) Next time...Im going to find a pineapple salsa. 1 8 oz can of tomato sauce 1 Tablespoon of chili powder. Drain pineapple or not. Set aside half of the the slices and chop the rest. Brown the pork over med heat. Pour off grease. Add beans, chopped pineapple, salsa, tomato sauce and chili powder. Bring to boil, and reduce heat to med low. Simmer 10 minutes. Serve garnished with pineapple slices sprinkled with extra chili powder. Makes 6 servings. 335 calories..

Okay...we did absolutely nothing this weekend and you know what...it felt great. We have always went to the state fair but this year we are skipped. We stayed in and relaxed. Oh..hey mom..we moved our ent. center to the corner. We like it much better.

Meet the new "Lyndee"

Meet the new "Lyndee" rock. Lyndee has a new best friend. Her pet rock is named Lyndee, of course. She has a beautiful pink color with gorgeous black beady eyes. One thing I like about this new Lyndee is that she is never hungry, does not talk back to me, and is very quiet. When I came home from work, I asked the new Lyndee how she was. In her smallest rock voice she said, "I am fine!" What a cute imagination my lovely girl has! Wait til you meet Brayd's new pet rock!
