Easy Guacamole

I made some awesome chicken enchiladas last night and they would not have tasted awesome if I did not put some of this green goop on. 2 really ripe avocados 2 T Pace Picante Sauce 1/4 tsp salt (or a little less) 1 clove of garlic Mash it all together and enjoy. Next we are trying garlic honey angel hair pasta....

Don't Glop on the Slop Recipe and we ate salad!!!

(slop pictured above) I have been trying to find new recipes that are fast, kid friendly, not too fattening, and of course tasty. I came across this recipe called Chinese Hamburger on this site here . It needed another name...SLOP because that is what it looked like. The taste of it wasn't too bad. Son ate alot of it and even wanted it in his lunch. 2-3 Cups cooked rice ( i used three) 1/2-1 lb. ground hamburger (use ground turkey) 1 Tablespoon soy sauce (use lite) 2-3 Cups cream of mushroom soup or 2 cans (use fat free) Step 1: Make rice. Step 2: While rice is cooking, brown hamburger (I browned it with some onion). Drain and set aside. Step 3: Mix cooked rice with browned hamburger. Step 4: Stir in cream of mushroom soup and soy sauce. Step 5: Taste test and add more soy sauce if desired. Then eat...but then you will realize that it needs something else so this is what we tried......GLOP, in other words (sweet red chili sauce) Ahhhh! Yumarama! Do not glop it on just enou

Getting ready in the morning

The morning time is such a rush for us. Trying to get everyone ready for school/daycare is rough and be out the door by a certain time. Lately, I have been telling Lyndee to pick out her own clothes and that she is old enough to do it herself. The day before this one in the picture,  she chose a skirt and hello kitty shirt. It did look cute but I hope that she wasn't too cold at recess. So on this morning, she had her outfit laid out right down to her socks and undies. Now if I could just get her to pick her own clothes off the floor I would be happy.

Our first tooth fairy visit

Last week, we (maybe it was just me as I tend to be impatient) were bothered by son's tooth. It just wouldn't come out! He let us tie a string to it and then we tied the string to the door. I wanted to tie it to a shoe and then throw it over the railing to the basement. Well, whatever...it didn't work. So last night it was literally hanging on but still wouldn't come out. I left for the Blue and Gold Banquet for scouting. Sister and brother played and roughhoused and it got either knocked out or swallowed. I am sad that I missed his tooth coming out. Look the tooth fairy came! Close up! That is my finger by the way. He slept peacefully through all my mugshots I sent to relatives. Yup...there's a gap! Now the other one is a smidge loose!

teacher gripe 10

Welcome to my non picture rambling. I walk into the teacher's lounge today and I tell a coworker that I think that I am ready for a career change. Then I rethink about how I would have to work summers and around the holidays so I reconsidered. Today was an exhausting day and I wonder if it is all worth it. I hate worrying myself at night wondering if Johnny B is learning what a pronoun is or if Sue Lee will reach her reading goal or if Bobby Jo will get her work in before the end of the tri. I am disappointed that some of my students are okay with not handing their work in and getting a failing grade. What am I doing wrong? I hate the fact that it is on my shoulders.I try to build students up but I just can't keep up. I feel like I am losing myself along the way. So I am just going to keep giving it my all and hope that I can see some growth somewhere someway somehow whether it be me or the ones that surround me.

Look what I bought for $15

There is a coop that delivers to a couple local places on Saturdays. You don't know what you get when you order. It is through http://www.bountifulbaskets.org/ . You can order additional items like a citrus basket, or breads/desserts. They are in Arizona, Idaho, and Utah. I received alot of different veggies and some fruits and I intend to use them as well. The kids already had a banana and couple of apples. I was hoping for a pineapple but I received some fruit that I have never tried: pummelo (pomelo) and asian pears. We hope to try these over the week. Then I received 2 butternut squashes. Yay! Don't know how I will cook those but I plan to. I got 9 sweet potatoes in my basket and I am going to try a recipe that sounds pretty good and if it is..ya know I will post it soon. Our weekend

Friday: We had a nice enjoyable weekend as family. First to start it off, we got our tax refund. Yay! Then my husband brought home flowers and cards for us all. He did this without being reminded that it was V-day. Nice bouquet of roses! Made me homesick for my roses at my old house. Then we took the kids out to dinner at Texas Roadhouse. We haven't been there since prekid days. I had the Roadkill. Who knew that chopped steak would be so yummy? Then we went to Kohl's to return my son's pants as he is really picky on pants. HE has to pick them out which I thought he did last week. Then we went to one of my favorite stores Deseret Book. I finally got my book that I wanted...The Undaunted.  Then we went home and I caught up on my DVR shows in the basement. Still have more upstairs to watch. Saturday: We took the kids to see Lightning Thief. It was rated PG. I can't remember how the book was because I read that book when it first came out. The movie was really good and it
